PALATHALIKALU RECIPE TO SATIATE YOUR SWEET TOOTH

Here in this blog, I give you a Palathalikalu recipe. Fortunately, the recipe is not as big and complex as the name of this dessert, it’s a pretty easy recipe. 

PALATHALIKALU? WHAT? Never could anyone hearing it for the first time imagine that it’s a sweet dish. This is a sweet dish from Andhra Pradesh– prepared during Ganesh Chaturthi. It is basically to South-Indians what’s kheer to North-Indians, only a little more aesthetic–I said what I said. 

Come along as we prepare this delicious dessert.

Recipe specifications:

Preparation Time: 15 minutes

Cooking Time: 15 minutes

Serves: 4

1 glass or Cup measuring: 250ml

Ingredients:

Milk: 1 litre

Jaggery: 250 grams

Sugar: 50 grams

Rice Flour: 4 glasses (250 ml glasses)

Cashews: 50 grams

Raisins: 50 grams

Cardamom: 5

Ghee: 2 teaspoons

Sago: 50 grams

Let’s begin with the recipe:

Step 1: Soak Sago for 1 hour

HOW TO MAKE THE DOUGH FOR THALIKALU/RICE NOODLES

Step 2: Add 1 tsp mashed jaggery to 1 cup water and boil.

Step 3: In a bowl add 2 tsp rice flour to little water.

Step 4: Add this mix into boiling jaggery juice. Now mix by stirring continuously for 5 minutes on low flame till bubbles are seen.

Step 5: In 4 glasses of rice flour, add this content and prepare a smooth dough.

PREPARATION OF PALATHALIKALU

Step 6: Next add 1 litre of toned milk to 1/2 litre water and turn the flame on.

Step 7: Once the milk is boiled, add soaked sago.

PREPARATION OF RICE NOODLES

Step 8: Insert the dough into the Palathalikalu-maker.

Step 9: When the sago becomes transparent, in the boiling milk slowly leave the chakralu in a spiral pattern.

Step 10: Don’t mix it with a spoon, and then do it again with the rest of the dough.

Step 11: Add 1 tablespoon of dough with a little water to it for thickness.

Step 12: Cook for 4-5 minutes, stir using a spoon and turn off the flame. 

(Do not overcook as it can make them hard and dense.)

JAGGERY SYRUP

Step 13: On high flame, add 250 grams jaggery and 50 grams sugar to 1 cup of water

Step 14: Turn off the burner once the jaggery syrup has thickened and let it cool.

Step 15: Filter jaggery syrup to Palathalikalu

Step 16: Heat 2 teaspoons of ghee and fry cashews & raisins.

Step 17: Add fried raisins, cashews and cardamom-powder to Palathalikalu.
