The vibrant cuisine of Kerala has to offer many delicious sweet dishes. Let’s meet the appa of sweets, Unniyappam! 

1) Unniyappams are sweet fritters are made from rice, jaggery, and bananas and have a crisp appearance on the outside and a fluffy interior.

2) Unniyappam is also called Karollappam.

3) During festivals, it is served in temples as prasadam, as well as a popular teatime snack.

4) In its most basic form, it is flavoured simply with cardamom and banana, but the addition of ingredients like sesame seeds, cumin seeds and dry ginger powder gives it a richer, more complex flavour profile.

5) You can also use rice flour to make the batter, but the results may not be as good as when you soak and grind the rice.

6) It’s common to let it sit for four to four and a half hours, letting it ferment a little, but it’s not required.

7) Ingredients used in unniyappam:- 

  • Raw rice (any variety) – 1 cup
  • Jaggery powder – ½ cup
  • Banana (ripe) – 1
  • Coconut pieces – ¼ cup
  • Ghee – 1 tbsp
  • Green cardamom – 3-4 pods
  • Black sesame seeds (optional) – 1 tsp
  • Cumin seeds (optional) – ½ tsp
  • Dry ginger powder (optional) – ½ tsp
  • Oil (any neutral tasting option) – as needed

 

8) Unni appam is a dish from Kerala cuisine served in a pan with three or more large cavities, called the appakara. With its tortoise-like shape, it is prepared in a bronze pan. 

9) Unniyappam traces its origin to the southern Indian state of Kerala.
